荷叶饼+扣肉
这次还做了荷叶饼来配扣肉,松软的荷叶饼配上入口即化肥而不腻的扣肉,真的是。。。。。

调料:老抽,豆瓣酱,腐乳,蜂蜜,盐,鸡精,糖,豆瓣酱和腐肉都是我家的做法才放的,别人家我就不知道了

不要辣的豆瓣酱,要带点甜味的黄豆酱才好,我在超市找了半天,只找到这个葱伴侣的豆瓣酱,可能满足我的要求,腐乳只要1/3块,调个味道而已,不能多。6yN

五花肉洗净切成大块,放到水里,煮到断生6uT.n+?J:x\-_;B6|'M
略微凉一下(也不能太凉)抹上蜂蜜

油锅烧到五成热,下抹过蜂蜜的肉块,转中小火,炸到肉皮起泡

(千万要看着火,我就是接了个电话,导致肉皮有点炸过了)

炸过的肉块用热水跑上半个钟头

然后捞出晾晾切成0.8cm的厚片,不要太薄,太薄的扣肉就没口感了

梅干菜洗净后用温水泡半个小时,减掉杂质和硬梗0Uhk)Uu _#O'O
锅内下油,把洗净的梅干菜攥去水分,下油锅炒(我在家里发现了茄子干,也加了点,味道非常好),煸透后放入老抽,料酒,大料水(泡过大料的开水),盐,鸡精mm$IB8t"V/F%v-S
切片的肉码到碗里,码上姜片葱段,再把炒过的梅干菜码上,把炒梅干菜的汁倒进去

上锅蒸,上汽后用中火蒸一个半小时\

ps:炒梅干菜的时候,各种料可以多放一点,因为肉里没有放盐,要靠这个汁水入味v;Z:Td+sg/wn

然后倒入面粉,逐量加水合成面团6a

发好的面团上面案揉成光滑的面团,分成小剂子(有饺子剂子差不多三个大)
